Jackie owns and runs Marsh Pig Award winning Charcuterie business as well as running monthly Curing & Smoking Courses, her background as Chef and years of commercial experience in Sales has allowed her to become a go to Consultant in all things Charcuterie.

Recent project have included:

  • Working with farmers in Southern Ireland who want to diversify from tradtional farming and butchery into Charcuterie
  • Setting up a Charcuterie business in Scotland from scratch to selling their products
  • Teaching monthly courses to butchers who want to make Charcuterie and use a curing cabinet successfully
  • Private tuition of several award winning chefs who want to make Charcuterie in-house

I travel across the UK and Europe teaching this craft and have the added bonus of being in commercial production myself so I can give advice on real pitfalls and opportunities.
